First experience is a normal sponge cake..It came out well..now I am continuing experiments on cakes..Here you go with Cashew cake(thats what I named :), don't know if there any copyrighted cashew cake already exist ;) ), which I made for the first time and gifted to my friend on her B'day :)
Cashew Cake
You need : 11/2 cup Whole purpose flour, 1tsp Baking powder, 1/2 tsp Baking soda, 1/2 cup Cashew powder,2 egg, 1/2 cup unsalted butter, 1 cup sugar, pinch of salt, 1/4 - 1/2 cup of milk, 1 tsp vanilla essence
- In a bowl mix butter(keep in room temperature) and sugar using hand mixer / spatula / spoon in a one directional circular motion. Once the sugar dissolved in butter ,add eggs and beat again. Stop once you get soft pale yellow mixture. Add vanilla essence to the mixture and mix well.
- Sieve Whole purpose flour, Baking powder, Baking soda and salt together in other bowl.
- To the egg mixture(1) add sifted powders a little at a time and mix well. If you feel the mixture very thick, add small quantity of milk and repeat the process.I have added only around 1/4 cup milk.
- Add cashewnut powder and mix very well.
- Preheat oven to 350 F. Greese the baking pan fully with butter and coat with whole purpose powder.
- Keep cake mixture in oven around 40 min/ until the cake is done.
Note : Insert a small knife to cake and see if it comes out clean (means without sticking the content in it.)
Tips :
- You can use pan with aluminium foil(will get from all grocery store for around 1$) for baking.
- If you have no oven, don't worry ..you can make cake using pressure cooker :) Here is the method the method for that http://www.awesomecuisine.com/recipes/972/1/Easy-Home-Made-Cake/Page1.html . I never tried, but seems to be good :)
